OUR PHILOSOPHY
Neither light nor dark roasted.
An infinitely free dimension of coffee roasting.
Where the true identity of the bean speaks directly to you.
We step beyond the realm of merely 'roasting for color.'
For us, roasting is the process of awakening the life of the fruit hidden deep within the heart of the bean.

Representative: Kenji Kojima
Having encountered Nordic Roast, a Scandinavian roasting method that maximizes the fruity notes of coffee, in Oslo, Norway, he pursues this method to roast coffee that is neither light nor dark.

Regarding roasting

Green beans
We purchase the highest quality coffee beans with wonderful characteristics each season.
Quality Control
We have a low-temperature warehouse with temperature control integrated into our roastery to ensure thorough quality control of our green beans.
In Japan, where temperatures can fluctuate significantly, temperature control is essential to prevent the deterioration of green beans.
About Roasting
Coffee beans vary in flavor depending on their origin, variety, growing environment, and processing method.
To bring out the unique characteristics of these coffee beans, a roasting profile tailored to each bean is necessary.
A remarkable feature of the Nordic-style roasting that has strongly influenced me is that it roasts beans according to their specific characteristics, without being bound by criteria such as light or dark roasts.
Please enjoy the inherent flavor of each coffee bean, free from any bitterness or smokiness caused by roasting.

Aging and Storage
Coffee Aging ― The Luxury of Waiting
Do you believe that fresh coffee must be consumed immediately? In reality, coffee has its own ideal moment for optimal flavor—a period known as aging.
Why Coffee Needs Time Freshly roasted beans contain a significant amount of trapped carbon dioxide. When this gas remains, it hinders hot water from properly extracting the soluble compounds, leaving the flavor muffled and blurred.
As the beans slowly degas over days and weeks, the haze clears—revealing the bean’s inherent sweetness and vibrant, clear fruitiness.
Guidelines for Peak Flavor At KRW, we roast our beans thoroughly to the core, condensing their inner flavors. Because of this structure, our coffee requires a slightly longer rest than standard roasts.
• Peak Begins from Day 7 Post-Roast: This is when the aromatics reach their fullest bloom and the body achieves a smooth, velvety texture. The flavor continues to harmonize and deepen through Day 10, Day 15, and beyond.
Storage Rules to Protect the Process To guide the aging process correctly, please keep these two essential habits in mind:
A. Store in a Cool, Dark Place: Oxygen, light, and heat are the main enemies of quality. Keep your beans in their original valved bag or an airtight container, away from direct sunlight.
B. Grind Right Before Brewing: Grinding drastically increases surface area, causing rapid degassing and prematurely ending the aging life. Keep your coffee in whole-bean form as long as possible, and grind only what you need.
Time is the final ingredient that completes a coffee. Enjoy watching its character evolve, day by day, from the date of roast.
KOJIMA ROASTWORKS
Emerging from the deep mountains of Chichibu, the Arakawa River travels 173 kilometers before reaching the sea. Along its path, in Yorii, Saitama, lies the KOJIMA ROASTWORKS roastery.
This building was formerly the warehouse of Tsukaya, a rice store that supported the local community for generations. It is a place that long held the fruits of human labor and daily sustenance.
Behind the building, an Inari shrine remains quietly preserved. A guardian of rich harvests, Inari is also intimately tied to the element of fire.
Once, this space held rice. Today, it holds specialty green coffee from around the world. Though the bean has changed, the core of our work remains constant: receiving nature’s gifts, applying fire, elevating their intrinsic character, and serving them to our community.
Beside the flowing Arakawa and through the changing seasons, we roast every day.
Grown afar, brought to Yorii, and transformed by fire into coffee. In every cup, we honor the passage of time on this land and the integrity of our work.
From this roastery, we deliver world-class coffee to the world.
